And a piece of Vegan Pumpkin Cheesecake...


We have been feasting big time today on steamed broccoli, brussels sprouts, acorn squash, whole grain stuffing with miso gravy and salad. It was soooo good. Too good! For dessert I made this double layer pumpkin cheesecake, modified from THIS recipe. Vegan food is so yummy, it's hard to believe people eat otherwise.

I'm so thankful to live in a place where fresh organic food is readily available, and that I have a sweet little munchkin to cook for. Happy Thanksgiving everyone!

I made that cheesecake earlier this month. It was good, but next time I'd tone down the lemon. I hope you had a fun Thanksgiving. Thanks for sharing all your tips and products recommendations!

I didn't add the lemon at all, and made a couple other alterations with spice and whatnot and it turned out great. Thank you for visiting, I love Your blog, so it's an honor.
