Kelp Noodles: Perfect Summer Fare

Do you know about Kelp Noodles?  I got really excited about them a few months ago, but the way I was preparing them didn't really do it for me completely.  Then I learned how to make them properly and I'm hooked--big time.  It's all about the sauce and mixing them with other textures.
My current obsessions are pesto (as pictured) and a Thai version.  My pesto is very basic--just pine nuts, salt and basil in the food processor and the Thai version consists of raw almond butter and Thai spices and herbs. The noodles make for the perfect summer dish and the options are endless.  This is some serious raw food goodness, very filling and satisfying and I actually like it much better than your standard whole wheat or rice noodles.

You can also add them to heated food, for instance they make for a great noodle bowl.  Instead of rice noodles in your curry, these work great.  Find them HERE.

ORGANIC CORN ON THE COB: Healthy Summertime Delicacy


Corn on the cob is not just a fluffy side dish, it's a nutritious summer delicacy worthy of center stage. Corn is just starting to show up at the Farmers' Market and it's outrageously sweet and delicious. We've had corn on the cob and salad now twice for dinner and it's quickly becoming a favorite meal.

Corn contains pantothenic acid, a B vitamin good for stress reduction (who doesn't need some of that), thiamine, a B vitamin helpful for brain function, beta-cryptoxanthin which are anti-cancer caratenoids, and folate, a B vitamin that supports the cardiovascular system and fetal health. Corn is also a good source of vitamin C, manganese, phosphorous, and fiber. Always buy organic (corn is one of the largest gmo crops and if it's not organic it's highly likely to be genetically modified) and look for firm fully developed cobs. We like ours with organic whipped Earth Balance, salt and pepper.

Peas Please!


Sweet snap peas make a perfect summer snack. My kid loves them (I've finally convinced him to eat the whole thing, not just the sweet peas inside) and so do I. We keep a little bag of these in the backpack for a quick snack on the go, we put them in salads and enjoy them sautéed with other veggies and tofu. I look forward to these every year. Rich in B vitamins, iron, vitamin C, K and folic acid, peas are great for heart health, bone health, and energy levels. You start seeing them in the Spring and then they fade away toward mid summer. Choose firm bright green organic peas, preferably from your local farmer's market. Snatch them up if you see them, because they won't be around much longer.
